The ingredients needed to make Bean stew:

  1. Provide 3 cups of kidney beans (any beans of your choice will also work perfectly).
  2. Use 2 of chilli (any type of pepper).
  3. Use 1 of red onion.
  4. Provide 1/2 cup of oil.
  5. Prepare 2 tin of chopped tomatoes (1 tin blended).
  6. You need 1/4 cup of tomato paste.
  7. Prepare 1 1/2 Tbsp of curry powder.
  8. Prepare 1 tsp of garlic powder.
  9. Use 1 tsp of Black pepper.
  10. Take to taste of Salt.
  11. Take 1 tsp of Paprika.
  12. Prepare 2 of bay leaves.

Steps to make Bean stew:

  1. Chop up all the vegetables and in a pan heat up the oil and fry the onions till is translucent and add the chilli and fry for 2 minutes..
  2. Add the paprika, coriander, curry powder and fry for 2 minutes.
  3. Add the tomato paste and fry for about 2mins, add the chopped tomatoes and the other half blended to the pan with ¾ cup of water and let it simmer for 15mins on a low heat stirring occasionally.
  4. Add the beans and cook for 10mins and salt to taste.
  5. Serve with rice or boiled potatoes..
