  7. Give it a really good stir and allow to simmer on medium for 5 minutes. If you're cooking the chilli on the hob, turn the heat down to low and leave the lid on for the first 45 minutes of cooking. Remove for the last 15 minutes and season well. If it's looking to thick, add a little more water at this point..
  8. If you are oven-cooking the chilli, leave the lid on and transfer to a preheated oven (180˚ c). Cook for 45 minutes and then remove the lid for the final 15 minutes of cooking. Season well and stir before returing to the oven. Add more water if it needs it. If you prefer a thicker sauce you can turn the oven down to 160˚ c and leave for a little longer. You can experiment with how long you cook your chilli for to get it just how you like it!.
  9. Warm a shallow, wide bowl and place 2 good handfuls of tortilla crisps in the bottom. Place 2-3 large ladles of chilli on top of the crisps and serve with sour cream and grated mozzarella.   5. Now you have 20 minutes and 0,5L of boiling water left, so go ahead and make some tea, and prepare to the last steps.
  6. I hope it was a nice tea break. Now go back to the cooking - cube the pepper, drain the beans and slice the garlic (Later I've figured out that it's better to start boiling beans earlier, together with potatoes, otherwise they might be too firm). Throw it all with the beetroots into the multicooker and boil for 10 more minutes at 105°C. Also, now you can add more water to reach 3 full liters if needed NB: watch out the hot water splashes!.

  3. Prepare 1 can of red kidney beans (undrained).
  4. You need 2 of medium onion.
  5. Take 4 of large garlic cloves.
  6. You need 3 of fresh chilles(serrano).
  7. You need 1 tbsp of ground cumin.
  8. Take 1 tbsp of dried oregano.
  9. Take 2 of medium carrots (sliced thinly).
  10. Get 1 of pepper (any color) diced.
  11. Prepare 1 pinch of salt snd pepper.
  12. Take 1 can of water (use empty kidney bean can to measure).

Instructions to make Mandys chilli:

  1. Put beef into a large pot and cook until brown and then drain off excess fat from beef, leaving 1 tbsp in the pot with the beef.
  2. Finally chop the garlic cloves and chillies add to pot and cook for 5 minutes stirring to avoid it sticking to the pot.
  3. Add cumin and dried oregano mix well.
  4. Add chopped pepper onions and carrots.
  5. Add tomato sauce and mix well.
  6. Add kidney beans in their own liquid (this helps thicken the sauce).
  7. Add can of water, bring to boil then reduce heat to a gentle simmer.
  8. When reduced to Ur liken season to taste with salt and pepper and serve it in a bowl and top with Ur favourite cheese or leave plain.
